Recipe: Fettuccine Alfredo

I haven't posted a recipe in awhile so I finally remembered to take some pictures of preparing a dish so I could share it with you.

I'm not a big fan of Alfredo (the boxed variety) but I do like the homemade version and this recipe was fairly simple and a pretty big hit. 

The Stuff
- 1/2 box fettuccine pasta
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/4 cup 2% milk
- 2 tablespoons heavy cream
- 1/4 teaspoon garlic powder
- salt and pepper to taste
- 2 oz cream cheese (quarter of a regular container)
- 1/4 cup grated Parmesan cheese
- 2 teaspoons parsley (optional)

Get Cookin'
- Cook pasta until al dente, drain
- In a saucepan, melt butter
- Whisk in flour until lightly browned
- Gradually add milk and cook while whisking constantly
- Stir in heavy cream and garlic powder until thickened
- Stir in cream cheese and grated cheese until melted
- Add pasta to the sauce and incorporate
- Add salt, pepper, and parsley to taste


Serve with green beans and french bread or rolls with butter.  Yum!
